Green garlic, or spring garlic, is simply garlic that is picked early in the spring before the cloves begin to form. It’s always a treat to have something fresh and green from the garden this early in the spring. Green garlic can be used in just about any way you would use regular garlic, perhaps even more since its flavor is not as robust and will not overpower the dish. It’s great grilled, sauteed or freshly chopped for a salad.
